Hello Lagom Lifer!
Do you love pancakes as much as I do? Well I have a delicious and healthy recipe for you: vegan gluten-free chocolate pancakes. It is easy and quick to make, with no guilt at all because it has no sugar and no gluten. This will make 6-8 servings, depending on how large you like your pancakes to be.
This is what we are going to need:
- 3 riped bananas.
- 1 cup of oatmeal.
- 2 cups of non-animal source milk (almond milk works the best).
- 1/2 – 1 cup of cocoa powder.
- 3-4 tbs of cocontut oil (you can use butter if you’re not vegan).
- 2 tbs of baking powder.
- 1 tbs of vanilla extract.
- A pinch of salt.
- Fruit of your choice (I love red berries for this recipe).
First, mix well all the dry ingredients: the oatmeal, the pinch of salt, the baking powder and the cocoa powder. Then, put all the ingredients into your food processor or blender (it still works fine), except for the coconut oil and the fruit you chose , we will need them a bit later.
Let the mixture stand for about 5 minutes; in the meantime, you can pre-heat the pan. Instead of using butter to spread onto the pan, we are going to use coconut oil (I use half a tablespoon of coconut oil for each pancake). Pour the mixture onto the pan and make a circle to the size of your choice; let it cook for around 3 minutes and then turn to the other side.
When the pancakes are done, it is time to serve and decorate them. Now we need the fruit you chose (berries in my case) and make your plate look beautiful, play with the fruit a bit. You can add maple, bee or agave honey for a sweeter taste, but I usually do not.
If you are not vegan, you can use milk and butter instead of almond milk and coconut oil, it is all up to you, it will be still healthy.
